I wouldn't go for a Plossl at all at that kind of focal length. The eye relief on Plossls is limited to about 2/3rds of the focal length – this is a fundamental limitation of the optical design regardless of the quality. If the eye relief gets too low they become very uncomfortable to use and in this case 5mm is likely shorter than your eyelashes making things even worse. You won't be aware of the problem with your 25mm Plossl since that will give you plenty of eye relief on account of its longer focal length. Personally I find Plossls fine down to about 15mm, slightly uncomfortable in the 12.5mm range and completely unusable under 10mm.
I would go for a different optical design. If money is an issue I would go for either a Baader Genuine Orthoscopic (for very high contrast and good colour correction) or a Celestron X-Cel if you want a slightly wider field of view. Either of these will cost a bit more than the equivalent Plossl but are still not silly money and likely to prove better value in the long run simply because they are more likely to get used in practice.

If you are in the U.S. and west of the Mississippi, you might be able to see it with a telescope of at least 10" of aperture. NASA TV will be doing a live feed and most certainly have video clips after the event.
As for size of the debris cloud after the impact, its going to be be small, maybe 20 – 30 miles on a side (don't forget, the moon is about 250,000 miles away). The crater it'll impact is something like 50 miles in diameter, but since its near the moon's south pole, its profile is going to be foreshortened.
There are several issues to be taken into account when using older lenses on a new digital SLR. First is that you will lose the autofocus and/or auto aperture features of your camera, also you will have to take into account the size difference between the CMOS sensor in your camera and a 35 mm frame. The sensor being smaller will mean that you will have to make some calculations as to what the actual zoom on a given lens will be. For example if you have a 55mm lens for a 35mm camera, it will actually function as a ~ 82.5mm lens (you would use the actual mm rating and multiply it by 1.5).

1) make sure your collimation is spot on. Use something like the Orion collimating eyepiece, not a laser.
2) The optimum focal length for the planets with your 10" scope is around 5mm (250x).
3) None of your Plössls are top quality. Vixen and Hyperion are much better. I also like Orion's Edge-On Planetary eyepieces.
4) Forget the 80mm for planetary observing — it's too small.
5) Be patient and train your eye to tease out fine low-contrast detail. It's there; you just can't see it yet. Sketching the planets is a great way to train your eye.
